Signature Pork Loin


My mother has discovered my blog. I told her about it, but I didn’t make a fuss. And as far as I know, she’s not really that into the World Wide Web so I didn’t push the issue. Then, one day she casually mentions that she saw my blog. Apparently she’s been telling the family about it too.

During my trip home for Thanksgiving my cousin says
“So, I heard you’re really into cooking now.”
I nodded.
Then, she puts me on the spot.
“What kind of stuff do you like to cook?”
“Um, different things. Whatever I think of really,” I said.
“Well what’s your signature dish? If you were gonna cook something for us, what would you make?”

I was feeling intimidated, then it hit me. I know one thing that always comes out great. It’s my spice-rubbed pork loin. I told her that’s what I’d make. I usually match it up with my savory sweet potatoes, but I picked out a different starch this time. These are called (oh i can’t remember)! But they are tiny and naturally buttery and the skin is so tender and thin.

For the vegetable, I steamed some fresh green beans, added butter, salt, pepper and some sliced cherry tomatoes.

Yes, this dish is my go-to entertaining dish.

Here’s how I made the pork.

Ingredients
Pork Loin
The Spice Rub:
Lemon Pepper
Garlic Powder
Seasoning Salt

1. Mix seasonings of your choice in a bowl
2. Rub the spices into the skin. Be sure to coat all of the surface area
3. Allow the pork to sit for at least 30 minutes (best results are overnight)
4. Let pork rest until it reaches room temperature
5. Heat a skillet, add olive oil.
6. Sear the pork on all sides until the spices set up, it will look somewhat like a crust or skin on the meat.
7. Move pork into a 350-degree oven and let cook for about 30 minutes.
