    Sweet, Sweet Peas

    Growing up, I never liked sweet peas. In fact, they kinda made me gag. Instinctively, I knew there was something remarkably wrong about the sweetness, and slippery texture canned so thoughtfully by the Green Giant. The flavor is what I imagine propane gas tastes like. I was content to spend my adult life pretending they didn’t exist.     P is for Peas, Pork

    Like most women, I’m watching my weight. Translation: I’m watching it hover at an unsightly number on the scale, but have no intention of giving up the sweet joy of baked goods. However, I did manage to lay off the carbs for a few weeks. My dinners were strictly meat and veggie-ish. The highlight of those 14-21 days was this beauty. My “succotash” contained butter peas and white corn with onions all tossed in an herb-laden compound butter. The pork chops were smoky, tender and moist.     LiD-isms

    Some of my random, but useful, thoughts about cooking….“to taste” as in “season to taste” I use this a lot because I don’t really measure. I just taste as I go. Most of my recipes have this terminology in them so I figured I’d expand on what I mean. Simply put, when all else fails, taste prevails. KISSthis isn’t an original thought, but it’s true of most things. KISS is an acronym for keep it simple silly.
