Good news and bad news, gang. The bad news first: I’ve been eating potato chips for dinner this week. I fault the grocery store for that Buy-One-Get-One-Free special on Lay’s. What was I to do? Now for the Good news: I’m a personal chef! I completed the training February 26 and have been working day and night balancing my day job and getting my personal chef business off the ground. Sausage & Peppers
This one is so easy. It’s the kind of meal I put together when everything else isn’t so together. Quick and easy. It requires 3 ingredients. Italian sausage, peppers and rice. You don’t even need to cut the peppers. I cheated and used the frozen trio of peppers. Ingredients Italian Turkey Sausage Frozen Peppers Rice 1. Cook your rice 2. Cook those sausages in a skillet, let them brown up and when they’re about done, toss the peppers in 3. Continue to cook until the peppers are soft. You’ll notice the moisture from the peppers and the juices from the sausage will build up in the skillet forming a gravy.…

Don’t Panic!
This post has nothing to do with food. It’s more about cooking and building confidence. Let’s consider it a tip. Here goes: Don’t Panic! That’s my message to you. Things go wrong in the kitchen. Stuff burns or gets dropped, knives can cut you.It’s a dangerous place, that kitchen. Toss in a gas stove and now you’ve added the element of an open flame. But guess what? It’s okay. Remember you are in control. Salvage the burned dish, toss out the dropped cabbage, put an adhesive bandage on that finger and get back to it. You still need to eat. Guess what else…you’ve learned a valuable lesson from whatever mistake…
