    Some weekends are better than others. I wish I could have extended mine just a little bit longer, but alas, I could not. So here I am facing another Monday. I guess I’ll just have to relive a bit of the weekend right here. Let’s see…. I’ll start with Saturday. I spent the morning at the Riverside Farmer’s Market, where I made some new friends and learned some new things and tried some new recipes. All good things, of course.     Grits and things

    Some weekends, I take really good care of myself. I get plenty of rest, eat a big breakfast and feed myself luxurious lunches like this. I make just what I want and just enough for me… not enough to share. It’s okay to be stingy with your shrimp & grits with garlicy braised spinach, they taste better that way.

    Pulled Pork on Ciabatta

    The sunshine and cool breeze have me mesmerized so I’ve been spending a lot of time out in the yard under my gazebo eating ice cream. This outdoor living is a huge accomplishment in itself. It took a lot of sweat and elbow grease to get the yard together, but I did it and now I’m loving it. Being out there has me thinking it’s prime time for some barbecue! Now grilling is a little more than I want to get into right now. Instead, I turned on the slow cooker to create this succulent pulled pork sandwich.
