Red Pepper, Goat Cheese Quiche
It’s Monday and it’s raining. The good news is that I have quiche for breakfast! A lil something I thought up for my students on Saturday. (I hosted a cooking class on soups and will post those recipes later.) I’ve gotten into the habit of providing some fuel before we get started and have wanted to make a quiche since I tasted the succulent varieties at a local bakery.

Obese? Wow!
Soooo I’m OBESE. I know. It’s such an UggLee word. Forgive me. I met with a personal trainer today. It wasn’t pretty. He weighed me. Then he asked me to hold this electronic device that reads your body fat percentage. Mine is 34 point something or other. Apparently, anything higher than 30 is considered obese. That’s what HE said, this man who calls himself “Mister Shut Up and Train” I thought to myself: “exCUUUSE me?!” Then he hit me with more “facts.” He even wrote these numbers down, my age, my current weight, my height. There it was, in black and white. I was so stunned, I couldn’t bring myself…
