    Avocados always win

    The warmer weather brings an abundance of some of my favorite produce. Watermelons, strawberries and avocados…those buttery, silky-smooth, decadent avocados are divine. I can sit and eat one with just a spoon and a sprinkle of salt & pepper. They’re so versatile too. They don’t mind if I mash them up into a chunky guacamole or slice them for a sandwich. They are always winning. The other day I was craving a creamy fix. This is what happened. I stuffed them into a wrap with chicken, cheese and caramelized onion.     In the Oven..

    I’m having a baby!! A baby. Who is growing and kicking and tossing and turning as we speak inside my uterus. It’s amazing. A miracle. We took a peek at baby boo last week. The intention was to find out the baby’s sex. Boy or Girl? What happened instead IS that we saw a very playful character sitting upright with crossed legs and a hand resting in his/her lap. Baby wasn’t ready. We’ll have to check in later. This isn’t over, baby.

    Comfort while waiting

    I am READY for spring. And the weather is teasing me so with a few shards of sunlight followed by freezing temperatures, then a peek of sunshine before the rain comes again. Sigh.It’s okay, I know spring will be here very soon and it gives me hope. I’m already in sundresses and sandals (in my mind).Meanwhile, I’m still cranking out some good ole comfort food to bid farewell to the few frigid days remaining. I had fun with this one. Meatloaf and mashed potatoes. But of course I tried to do something a little different with it. I used both ground turkey and pork, some cheeses and spinach. And it…
