Guacamole
Summer = Mexican food + Margaritas.
It’s been a lovely summer. I’ve enjoyed a few road trips, lots of tacos, and quesadillas, melted cheese and rice & beans. But who can eat Mexican without some essential condiments? Salsa, Pico de Gallo and my favorite is guacamole.
Avocados are so cool and creamy. Before the season changes again, I beseech you, make some guacamole.

Ingredients
- 2 ripe avocados
- 2 tbsp small diced red onions
- ½ cup of halved cherry tomatoes
- 2 tbsp chopped cilantro
- juice of ½ lime
- salt
- garlic powder
Instructions
- In a bowl combine your pitted avocados and mash slightly with a fork.
- Stir in everything else. Combine, don't turn it into paste, it's good with chunks
