Going Green (Part 1)

When the New Year began, I decided to start a food journal. I hear it’s an effective way to manage your weight.
My weight needs to be managed.
As I “mature” in years, it’s becoming apparent that I can’t get away with the snackalicious diet I’m accustomed to.
There are consequences for eating ice cream in the middle of the night, potato chips whenever I pass the pantry and drinking Starbucks just because.
Man! I never thought this would ever happen to me.
I used to scoff when I heard women say:
“I can’t eat that donut,” or “Oooh I’m gonna pass on dessert, it goes straight to my hips!”
I thought, seriously? What harm can one donut do?
Now I know. A LOT!
It’s the habit of snacking that creates unwanted curves. Writing down everything I eat has knocked the blinders off. It’s ever so clear. I’ve been working hard to keep this full figure. Although, I eat balanced, healthy meals, I tend to sabotage the effects by consuming an abundance of junk in between them.
As a result, I’m making a conscious effort to replace the sweet and salty snacks with real food, i.e. nuts, fruits, salads. This creamy spinach is a quick and healthy snack. Who needs potato chips?

Ingredients
10 oz Frozen Chopped Spinach
1/2 cup of Asiago Cheese
1. Add spinach to a small pot. Do NOT add water. Let spinach defrost in the pot, there will be enough moisture once it thaws.
2. After the Spinach is completey thawed, drain any excess water. You don’t want to have standing water in the pot, if the spinach is just moist, that’s perfect. If you see water floating in the bottom of the pot, pour it out.
3. Toss in your cheese and let it melt into the spinach.

    I was the same way you were… I was skin and bones and ate everything but the kitchen sink… as I went into my twenties and got a desk job I realized that I could no longer eat everything and anything in front of me! It sucks, but we all must buckle down if we want to stay a healthy weight! I realize I’ll never be skin and bones again, and I’m ok with that–I like my curves. I would like to shave a little extra off some curves more than others! Keep the awesome recipes coming!

    @Katie, Thanks! I will keep them coming
    @Tam, I haven’t tried this recipe with fresh spinach. I imagine you’d really have to drain it because it releases so much water AND fresh spinach wilts so much you’d probably need 10 bunches to get a good size serving! Check back on Friday. I’ll post a different recipe that uses fresh spinach.
