Comfort while waiting
I am READY for spring. And the weather is teasing me so with a few shards of sunlight followed by freezing temperatures, then a peek of sunshine before the rain comes again. Sigh. It’s okay, I know spring will be here very soon and it gives me hope. I’m already in sundresses and sandals (in my mind).Meanwhile, I’m still cranking out some good ole comfort food to bid farewell to the few frigid days remaining. I had fun with this one. Meatloaf and mashed potatoes. But of course I tried to do something a little different with it. I used both ground turkey and pork, some cheeses and spinach. And it was good.My 8-year-old looked so disappointed when I served it up. She said “I thought you were making chicken!”
And I was, but that was for another day.
I told her the chicken was for later, so eat your meatloaf. She took a bite and her tune and pouty face quickly changed. “Mommy, this is so good. I want another piece.”
Then, she moaned and groaned through dinner. I don’t know why she every doubts me.
