Cilantro Lime Steak
Why am I doing this to myself just before bed? Just looking at this picture makes me want to run out and buy some more steak and do it all over again. But I can’t. I won’t! It’s close to midnight and the only comfort available at this moment is a cold bowl of generic Cocoa Puffs.
Excuse me, I’m sure you don’t want to know all of that.
What’s important now is this steak.
Tender, juicy, citrus-infused and delightful.
(the guacamole is also very special but I’ll tell you about that later)
Ingredients
1 lb Top Sirloin
2 tbsp Olive Oil
1 tsp Salt
1tsp Black Pepper
1 tsp Garlic (Granulated)
1/4 cup Cilantro
Juice of 1 Lime
1. Get a your steaks and toss it them in a large ziplock bag.
2. Mince up your Cilantro and toss it into the bag with the other ingredients. Rub everything around being sure to coat the steaks. Let them marinate in the fridge for at least 30 minutes.
(fyi: the acid from the citrus actually helps tenderize the meat)
3. Take the steaks out and let them rest about 10 minutes, you don’t want them too cold when they hit the grill or it can bring down the temperature of your pan and shock the meat too much making it tough.
4. Heat a grill pan and when it’s hot enough to sizzle toss the steaks on for about 3 minutes per side. That will give you this medium finish. Leave them longer for a more well done product.
