There I was minding my business, picking up produce. That’s when I spotted them. Golden Beets. I smiled. I hadn’t seen them here before. At least I don’t remember seeing them. Surely, I would have made a move if I had. I mean, Golden Beets just sounds like something I need to be eating.

Blueberry & Ricotta Oatmeal
I’m not a big fan of oatmeal. It’s a texture thing. However, from time to time, I will give it another chance. I reintroduce myself because I know it’s a source of good carbohydrates and fiber. I’ve learned that when I accessorize them well, with a mixture of toppings, I enjoy them more. Nuts, dried fruit, brown sugar or whatever I can find. This time around, I was inspired by the Ricotta Pancakes at Highland Bakery. They were creamy and moist, containing silky ricotta in the batter. When in doubt, roast it out
When I saw this little eggplant at the farmers market, I couldn’t resist. I get so excited when I see something different. It’s inspiring to discover new things in there, then to go home and figure out what to do with them. Usually, I Google said item then get to work. But, uh, these eggplant weren’t really any different than a regular eggplant, they were just a smaller variety. And with that the excitement waned. I thought about eggplant parmesan or some Indian-inspired preparation. Those thoughts made me tired. So I resorted to a tried and true technique. Roasting!
